Peach Burrito Bowl

If there’s one dish I could eat on repeat, it’s a grain bowl—especially a burrito bowl! It hits that perfect balance of bold flavors, vibrant colors, and all the satisfaction of a burrito, minus the mess. And the best part? Burrito bowls are incredibly versatile, so you can customize them with whatever you’re craving.
I am a strong believer in the fact that the most important part of any burrito bowl is the toppings - I will always pay the extra $2.75 for guacamole at Chipotle, and good (or bad) toppings can make or break your bowl. And even better, you can mix and match your toppings depending on what’s in season or what you have in the fridge.
The star of the show in this bowl is definitely the peach salsa - its juicy sweetness pairs perfectly with the tangy lime and a hint of spice. It pairs perfectly with my cilantro garlic yogurt sauce, creating a truly epic bite. I’m a big fan of meal prepping my toppings, storing them in separate containers, then assembling the burrito bowls when I’m ready to eat.
PEACH BURRITO BOWL:
Ingredients:
Peach salsa:
2 cups peaches, chopped
3 roma tomatoes, chopped
½ red onion
1 jalapeño
3 tbsp lemon juice
1 tsp cayenne pepper
½ tsp salt
Cilantro garlic yogurt sauce:
1½ cup 2% greek yogurt
½ cup cilantro
1 tbsp lemon juice
2 cloves minced garlic
¼ tsp salt
Additional ingredients (for bowl assembly!):
Protein of choice, combined with taco seasoning (tofu or chicken would be great options)
Brown rice, cooked
Black beans
Romaine lettuce, chopped
Avocado
Preparation:
Peach salsa:
Finely dice peaches, tomatoes, red onion, and jalapeño (deseed if preferred).
Combine ingredients above, then add lemon juice, cayenne pepper, and salt.
Mix thoroughly to combine.
Cilantro garlic yogurt sauce:
Combine all ingredients in a food processor or blender.
Blend, adding additional lemon juice and / or olive oil to get to your desired consistency.
Final assembly:
Put your desired quantity of brown rice in a bowl.
Top with peach salsa, cilantro garlic yogurt sauce, and all ingredients in the “additional ingredients” section, layering as preferred.
